Linalool and estragole (the compounds that make fresh basil fragrant) largely evaporate on drying. Grocery dried basil is one of the most significant potency drops in the entire system — impact adjusted from 2 to 1. It contributes mild herbal body but little of the brightness of fresh. Use as background texture, not as a flavour driver.
