Estragole is highly volatile. Grocery dried tarragon has very little of the sweet anise character that defines it — impact adjusted from 2 to 1. This is one of the hardest Brighteners to source well at grocery. Use fresh if tarragon is a key character, or substitute with a small amount of fresh basil + fennel seed.
