The musty fermentation notes that distinguish white from black pepper are volatile. Grocery pre-ground white pepper loses some of its complexity but retains its heat. Impact adjusted from 4 to 3 — heat reliable, character reduced. If the distinction matters, buy whole white peppercorns.
